Hearty Beef Stew Recipe

1 1/2 lbs. round steak
2 tablespoons oil
1 cup carrots
1 cup onion, chopped
1 bay leaf
1/2 teaspoon thyme
1/2 cup flour
3 cups water
1 cup celery, chopped
4 cups potatoes, chopped
2 teaspoons minced parsley
2 tablespoons cornstarch
2 cloves garlic, chopped
Salt and pepper to taste

Cut meat into 1 inch cubes and roll them in the flour. Brown the meat in the hot oil in a large heavy pot. Add water, bring to a boil, them simmer for 1 1/2 hours. Add vegetables and spices and simmer another 30 minutes. Mix cornstarch with a little cold water to form a thin, smooth paste. Add to the stew, stirring until thickened.
