1 - 2 tbs olive oil
1 onion finely chopped
1 stalk of celery
2 large cloves of garlic minced
2 tsp chili powder
1 1/2 tsp oregano
1/2 tsp cumin
1 tsp finely chopped jalepeno pepper
W/F Italian style tomatoes
4-5 cups of water with chicken stock to taste
1 can unico black beans
cajan pepper
basmati rice

saute onion, celery, garlic in olive oil 5 minutes. Stir chili powder, oregano, cumin, jalepeno pepper, cook for 2 min. W/F Italian style tomatoes, squish in hands so not chunky, put in pot, Add water with chicken stock to taste, can unico black beans, cajan pepper,. 25 min, last five simmer for minutes add cook basmati rice
