2 eggs 1 t. each almond and vanilla extract
1/2 c. sugar 1/4 t. salt 1 t. baking powder
1 3/4 c. cake flour 2/3 c. pistacchio nuts
2/3 cups of dried cranberries 3 oz. white choc
1 tbl. grated orange peel

Directions:
Preheat oven to 350 degrees. Beat eggs with electric mixer on high speed until fluffy. Beat in both extracts and sugar until thick and lemon colored, Scrape sides of bowl frequently. Mix cake flour with baking powder and salt. With wire wisk fold into egg mixture until thoroughly combined. Fold in nuts and cranberries and orange peel. Grease two cookie sheets and spread 1/2 mixture onto each sheet and shape into a 10"x3" log. Bake for 30 minutes. Remove from oven. Leave oven on. Allow logs to cool on sheets until cool enough to handle. With a serrated knife, diagonally cut each log into 16 slices. Place slices flat side down on cookie sheet and return to oven. Bake 5 minutes and then turn over and bake another 5 minutes. Remove to a rack and allow to cool completely. Dip one end into white melted chocolate and sprinkle half them with red sugar and half with green sugar for christmas.
Note: melt choc pieces in microwave until smooth about 15-20 seconds.
Store in tightly covered container.
