1 Tablespoon Butter
1 Tablespoon Flour
Milk as needed
Salt
Grated Parmesan Cheese

Directions:

1. In a small sauce pot, melt the butter. Stir in the flour when melted. Cook for 1 minute. Do not let the flour brown. It has to stay white. Congratulations! You just made a roux.

2. Add 1 cup of milk and stir thoroughly. It will thicken as it heats. Add milk a little at a time and make sure it comes to a slight boil before adding more. Do this until desired consistency is reached.

3. Add parmesan cheese and salt to taste.
