8 oz. medium whole wheat egg noodles
1 t. olive oil
1 lb. extra lean ground beef
1 c. chopped onion
1 t. minced garlic
8 oz. sliced mushrooms
2 T. flour
1 c. beef broth
1 1/4 t. salt
1/8 t. black pepper
3/4 c. light sour cream
1 T. dry sherry or dry white wine

Directions:

Cook pasta and drain.
Heat olive oil in a large skillet over medium high heat. Add beef to pan and brown. Add onion, garlic and mushrooms to pan, cook 4 minutes, stirring often. Sprinkle with flour and cook for one minute, stirring. Stir in broth and bring to a boil. Reduce heat and simmer 1 minute or until slightly thick. Stir in salt and pepper. Remove from heat. Stir in sour cream and sherry. Serve over pasta.
