6 to 8 medium green bell peppers
water
5 slices bacon, fried and drained
1/4 cup butter
1 large onion, shopped
4 green onions, chopped
4 stalks celery, chopped
1 garlic clove, minced
bell pepper tops, chopped
1/2 lb. ground beef
1 cup bread crumbs
2 eggs
3/4 cup milk
2 teaspoons parsley, chopped (flakes)
Salt and pepper to taste
5 slices raw bacon cut into thirds

Directions:
Cut the tops of peppers. Clean out pulp and seeds. Remove tops. Steam peppers in a large pot. (dull green) Fry 5 slices bacon, drain, crumble, set aside. Saute onions, celery, garlic and pepper tops in bottom. Add ground meat, brown, drain excess liquid. Add bread crumb mix. Eggs, milk, bread crumb. Add crumbled bacon and parsley. Season with salt, pepper, and sauce. Spoon mixture into peppers. On top of each pepper make an x with raw bacon. Bake at 350º for about 40 minutes.
