1/4 cup butter or margarine
1 medium onion, chopped
2 cups rice
1/2 tsp. poultry seasoning
1/2 tsp. salt

Directions:
Directions:
Cook rice according to directions on package. In separate pan, cook butter and onion until tender, stirring occasionally. Mix in cooked rice, poultry seasoning and salt (add more or less according to taste). Enjoy!

This simple rice dish was passed down to me from my mother. She would make it whenever she made a poultry dish and didn't have the time to make a traditional stuffing. I loved it so much that it became known in my family as "Casey's favorite rice". Works well as a stuffing or as a separate side.
