Grammy's Zucchini Casserole Recipe

3 cups Bread Crumbs
1/2 cup butter
4 cups thinly sliced Zucchini
3 cups sliced Roma Tomatoes
1 finely diced Onion
1/2 cup finely diced Red or Green Bell Pepper
1/2 tsp. each Salt and Pepper
2 cups grated Sharp Cheddar Cheese

Preheat oven to 350.

Combine bread crumbs and butter and process in processor.

Layer 1/3 of the zucchini, onion, tomatoes and bell pepper in a sprayed pan. Sprinkle with salt and pepper, cheese and bread crumbs. Repeat layering twice more.

Cover and bake for 1 hour. Remove cover and bake 15 minutes longer.
