One tablespoon cheese spread
3 large or jumbo eggs beaten separately
1 tablespoon sour cream or yogurt

Directions:

Whip egg whites until stiff but not dry. Beat egg yolks; add cheese spread and sour cream, mix until smooth. Fold into egg whites.

Coat stick-proof omelet pan with butter; heat on top of stove (medium heat). Add egg/cheese mixture. Heat until bottom turns brown – approximately 3 – 4 minutes; put in 400º oven until it is puffy and lightly browned. Remove from oven and spread approximately 1 tablespoon of sour cream or yogurt across top; divide into wedges and serve.
