Pork tenderloin
1 C. sliced onion
2 C. sliced celery
1 can of drained chunk pineapple (Keep 1/2 C. of the pineapple juice)
½ sliced green pepper
½ C. White vinegar
½ C. Soy sauce
½ C. White sugar

Directions:
Directions:
Brown pork in a small amount of olive oil add salt and pepper to taste. Add enough water to cover the meat and bring to a boil. Pour meat and broth into crock pot and cook until tender.
When meat mixture is done, transfer to pan. Add onion, celery, green pepper and pineapple.
Pour pineapple juice it into small pan, add the sugar, white vinegar and soy sauce. Heat until sugar is completely dissolved.
Add the pineapple juice mixture to meat and simmer until veggies are tender.
Thicken with a mixture of cornstarch and water. Serve with white rice.
