1 ½ C. butter
3 C. brown sugar
4 T. water
4 C. chocolate chips
4 eggs, slightly beaten
5 C. flour
2 ½ t. baking soda
1 t. salt
Andes Mints (about 100)

Directions:
Directions:
Over low heat melt butter, sugar and water together.
Add chocolate chips and stir until partially melted. Let stand off heat.
Mix dry ingredients and then mix in egg.
Add to chocolate mixture and stir.
Chill at least 1 hour. Drop spoonfuls on cookie sheet sprayed with Pam.
Bake at 350º about 11-12 minutes (do not over bake).
Take out of oven; immediately place mint in center and press gently. After a minute, swirl with back of spoon. Remove from cookie sheet after 3-4 minutes.
