Peeled and cubed sweet potato (or carrots, parsnips or other root vegetables)
1-2 T. Olive oil
Salt and pepper to taste
2 T. Maple syrup (preferably grade B cooking syrup)

Directions:
Directions:
Preheat oven or toaster oven to 400. Cut vegetables into strips or bite-sized cubes and toss with olive oil to coat (1-2 T. depending on the amount of vegetable). Add salt and pepper to taste. Place in a single layer on baking sheet and roast in oven or toaster oven until tender, approximately 10-20 minutes. Stir occasionally to make sure vegetables don't burn, but return to single layer. Remove from oven and coat with maple syrup. Return to oven for another 5-10 minutes, long enough for syrup to carmelize.
