1 1/2 cups flour
1 1/4 cups sugar
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/4 tsp. salt
9 oz. carrots (just over a cup) grated
2/3 cup oil
2 eggs (slightly beaten)
1/2 tsp. vanilla
8 oz. crushed pineapple (drained)
2/3 cup coconut
1/2 cup chopped walnuts

Directions:
Directions:
1. Fork mix well, flour, sugar, baking soda, cinnamon, and salt.
2. Add carrots, oil, eggs, and vanilla.
3. Mix briskly with fork until thoroughly blended.
4. Stir in pineapple, coconut, and walnuts.
5. Put mixture into a 9 inch square pan.
6. Bake in preheated oven 350ºF for 40 to 45 minutes.
7. When cold cover with Cream Cheese Frosting
