1 12oz. container firm tofu - drained
1 large egg
1 T. mayonnaise
1 T. Dijon mustard
1/4 tsp. sea salt
1/2 tsp. paprika
1/2 tsp. garlic powder
fresh ground pepper
1 cup freshly grated Parmesan cheese

Directions:
Directions:
Heat oven to 400º. Line a baking sheet with parchment paper. Cut tofu into long, thin french fry like sticks. In a large shallow dish, beat the egg, mayo, mustard, salt, paprika, garlic powder and pepper until well combined. Spread the cheese out on a plate. Add a few tofu sticks at a time to egg mixture and roll them gently to coat all sides. Transfer to cheese plate, and roll to coat. Transfer to baking sheet. Bake 20 minutes. Place under the broiler for a minute or so just to lightly brown tops. Sprinkle with salt and serve right away. Hint...overcooking makes them too tough. Great with your favorite sauce.
