21/2 cups cooked rice (wash rice before cooking)
1/4 lb. beef 1/4 inch cubed
3eggs
1/3 cup carrots, diced
1/3 cup bell peppers, diced
1/4 cup green onions, diced
4-5 Tbs. cooking oil
2-3 Tbs. Soy Sauce
1/2 tsp, salt

Directions:

Marinate for meat: (approximately 10 minutes)
1 tsp. freh ginger peeled and minced
2 tsp. soy sauce
1tsp. sugar
1 tsp. cooking wine sherry
dash salt and pepper

In large skillet, brown meat on high in oil. Make sure you see smoke coming from pan before you start cooking. Remove meat from pan. Scramble eggs and remove from pan. Add carrots and peppers to pan, stirring continuously. Add rice to mixture and reduce heat . Add Soy Sauce. Make sure you keep stirring and mix well. Add green onions and eggs. Put meat back in pan and mix all together.
