(1 turkey carcass for stock)

6 cups turkey stock
2 cups celery, sliced
1 1/2 cups onions, chopped coarsely
1 small can early peas
4 TBLS cornbread dressing
3 TBLS flour
1 tsp kosher salt
1 tsp freshly ground black pepper

Directions:
Directions:
After thanksgiving dinner remove meat from turkey and boil the carcass in enough water to cover.


Saute onions, carrots and celery until translucent. Add flour and cook for 1 minute.

Add broth, peas, seasoning and bring to full boil. Lower heat to medium and cook for 45 minutes. It broth becomes too thick add more broth or water.
