Ingredients: Baked Sweet Potatoes – one for every two people 1 Lime Kosher Salt Pepper

Directions:Ppreheat oven to 375 degrees
Bake potatoes in oven for 1 hour and 10-20 minutes. When you can easily pierce them with a knife, remove them from the oven and scoop out the flesh with a spoon, into your serving bowl.
Mash with the back of a fork until desired consistency is reached – I like mine a bit chunky. Add a healthy pinch (or three) of Kosher salt and a few twists of fresh pepper. Squeeze fresh lime juice over the top and serve.
(For an extra fancy step, stir in the lime juice and then zest lime rind over the potatoes. The pretty green spirals look great on the bright orange potatoes).
Another idea (for a fuller fat feel) Heat ½ cup nonfat milk over low heat and steep a vanilla bean pod with orange zest. Pour over the potatoes fresh from the oven and mash. You can also add a spoon or two of nonfat yogurt, just as you would sour cream, for a more tart version. |

Notes: It’s turkey time, once again, my favorite holiday. Between me, you and the fence post I’ll be the first to admit that I always carve the turkey so that I can have a big bite of salty crispy turkey skin to myself! Because that’s not the healthiest thing to do (who’s counting?), I like to make up for it by going easy on what are traditionally heavy sides. Sweet potatoes are loaded with vitamins and antioxidants. They are much more nutritional than a regular ol’ white potato. Surprisingly, lime juice is a wonderful counterpoint to their sweetness. Give this a try and everyone will beg for them next year!
