1 large ripe tomato
5-6 slices of soft gourmet mozzarella cheese
1 bag of spring mix salad greens
4-5 tbsp light olive oil
Basil (fresh - use leaves only- chopped)
Balsamic Vinegar

Directions:
Directions:
On a serving platter, place the salad greens on first. Lay sliced tomatoes on top of the greens. Then lay sliced cheese on top of tomatoes. Sprinkle chopped fresh basil over cheese. Lastly, drizzle olive oil and balsamic vinegar over whole salad. Add salt and pepper to taste and you will have a gourmet salad for your family and friends.

Probably the first time I ever had this salad was in Miami. Our good friend David Ingorda introduced this to us. It was so delicious.
