2 Large or 4 Small Mackerel Flitted
Self-Raising Flour
2 tbl Cooking Oil
1 Chopped Onion
2oz Sliced Mushrooms
1 Clove Garlic
3 Skinned and sliced Tomatoes
1 Teaspoon chopped Parsley

Directions:
Directions:
Wash and dry fish - cut in half and coat with flour
Heat 2 tablespoons of Cooking Oil in a pan
Fry fish until brown then arrange in oven proof dish
Add the rest of the Oil to the pan, and fry Onions, Garlic and Mushrooms.
Remove pan from heat, season with Salt and Pepper.
Add Tomato slices and Parsley on top of the cooked fish
bake at 350º for 20-25 minutes
