1/4 cup ( 1/2 stick ) butter
2 medium onions, chopped
2 Tablespoons flour
1 teaspoon curry powder
3 cups chicken broth
1 cup chopped potatoes
!/2 cup thinly sliced carrots
1/2 cup sliced celery
2 Tablespoons chopped fresh parsley
1/2 teaspoon sage or poultry seasoning
2 cups cubed cooked turkey
1 1/2 cups half and half
1 ( 10 oz. ) package frozen chopped spinach
salt and pepper

Directions:
Directions:
Melt butter in large saucepan over medium heat-high heat. Add onions and saute until translucent.....aobut 10 minutes. Stir in flour and curry powder. Add broth, potatoes, carrots, celery, parsley and sage and bring to a boil. Reduce heat to low, cover and simmer for 10 minutes.
Add turkey, half and half and spinach. Cover and continue simmering until heated through......about 7 minutes.
Season with salt and pepper. Serve hot.

Note: If I don't have left over turkey, I use deli roast turkey slice on # 9 thickness.
