Grated zest from 2 lemons
1/4 c. freshly squeezed lemon juice
6 T. (1/4 stick) margarine
1 c. sugar
3 eggs

Directions:
Directions:
Put the zest, lemon juice, margarine and sugar in pan and cook over low heat until margarine is melted and sugar is dissolved. Beat eggs in a small bowl and add a small amount of the lemon mixture stirring constantly. Gradually add all of the eggs to the lemon mixture while stirring. Continue cooking slowly, stirring constantly until the curd is thick. Remove from heat and refrigerate until needed.
