2 lbs. Yellow Squash
1 med. onion, finely chopped
3/4 cup sour cream
1 carrot, finely grated
1 can cream of chicken soup
1/2 stick margarine
Salt and Pepper to taste
1/2 pkg. Pepperidge Farm Herbal bread Crumbs
1/2 cup shredded cheese

Directions:
Directions:
Preheat over to 350º. Boil squash (sliced 1" thick), carrots and onion for 5 minutes in salted water, drain. Combine cream of chicken soup, sour cream. Fold squash and onions into this mixture. Mix together stuffing and margarine. Spread half of stuffing mix in bottom of 9" x 13" banking dish. Add the vegetable mixture on top of stuffing mixture. Sprinkle remaining stuffing mixture and bake for 25 to 35 minutes.
