12 Eggs
1 1/4 lbs Swiss cheese (grated)
½ cup flour
½ tsp baking powder
1 pt small curd cottage cheese
1 lg onion sautéed & cooled
2 cans of diced green chilies
1 cube melted margarine

Directions:

Beat eggs until well mixed.

Add cheese, flour, baking powder, cottage cheese, onions, and chilies. Mix until well blended.

Coat mini muffing tins with the melted margarine. Fill the cups in the tin 1/2 full of egg mixture and bake for 30-35 minutes at 375º F. The mixture should begin browning. Remove from oven and let tin cool on rack for about 5 minutes. Remove quiche from tin and allow to finish cool on rack.

Repeat process until mixture is used, being sure to coat the tin with margarine before each filling.

This quiche is something my mom always makes for our family. She also has a variation where she uses pepper jack cheese instead of Swiss cheese (you don't need the chillies with that variation). I have always enjoyed having these and they freeze well if you keep them in an airtight container or vacuum seal.
