1 1/2 c fresh green beans sliced into 1/12 inch diagonals
1 # large shrimp cooked and peeled
2 c chopped English cucumber
2 cups chopped fresh tomatoes
1 c chopped bell pepper
1/2 c chopped green onion
1/4 c chopped fresh basil
1 c spicy V-8 juice
1/4 c red wine vinegar
1 T extra virgin olive oil
1/4 t sugar
1/4 t black pepper
1/4 t hot sauce
2 cloves ch garlic

Directions:

Steam green beans for 4 minutes or til crisp tender.
Drain and rinse in cold water.
Combine beans, shrimp and the next 5 ingredients through basil in a large bowl. In a smaller bowl combine the next 7 ingredients (juice through basil) and mix well with a whisk. Pour over the shrimp mixtune and toss well. Serve over mixed garden greens or alone as a cold summer "stew".

This also gets better the next day. I make a recipe of this and it feeds me for several days. It will last for 3-4 days in the fridge!
