1 pound ground beef
3/4 cup chopped onions
3/4 cup shredded carrots
3/4 cup chopped celery
4 teaspoons butter
1 teaspoon basil
1 teaspoon parsley
3 cups chicken broth
4 cups diced potatoes
1/4 cup flour
1 1/2 cups milk
2 cups Velveeta cheese , cubed
1/4 cup sour cream
Salt and pepper to taste

Brown hamburger, when done remove hamburger and fat from pan. Add 1 tsp.butter then onions, carrots, celery, basil, and parsley. Sauté until tender; then add hamburger, potatoes, and chicken broth; bring to boil then reduce heat and simmer until the potatoes are tender. In separate pan melt 3 tsp. butter, add flour and bring to boil (making rough). When potatoes are tender add rough and bring to a boil for 2 minutes. Add milk and cheese. When cheese is melted add sour cream and salt and pepper to taste.
