Select Lean Pot Roast - 3 or 4 lbs.
4 T. Oil
salt & pepper
Flour
Onion - sliced

Directions:
Directions:
Salt and pepper the roast well - dredge through the flour - place in pan on top of stove with hot oil - brown meat on med-high heat. Slice onion an put in pan with browned meat. Cover and cook on top of stove on low for about two hours - cook rice. When done - remove from pan and slice...gravy is already made and ready to serve from pan.

I love this recipe - I have a special friend in Ohio - who was horrified when she first saw this "plain" roast on my stove - started to add the typical roast veggies - most people in South Lousiana - eat meals with rice - something that I immediately clung to - and my friend (Shelly) appreciated when the meal was done!
