1 1/2 Cups Flour
1 t. ground cinnamon
1/2 t. baking soda
1/4 t. salt
1/4 t. baking powder
1/4 t. nutmeg
1 Cup Sugar
1 Cup finely shredded zucchini
1/4 Cup Oil
1 egg
1/4 t. finely shredded lemon peal
1/2 Cup Chopped walnuts

Directions:
Directions:
Mix flour, cinnamon, baking soda, salt, baking powder and nutmeg . In another bowl combine sugar, zucchini, oil, egg and lemon peel; mix well. Add flour mixture - stir till just combined. Stir in nuts.

Pour batter into a greased loaf pan. Bake at 350 for 550 to 60 minutes - test with toothpick. Cool completely before slicing.

Sometimes waiting for the bread to cool is difficult! If you slice to early - may be a bit crumbly - but great with some butter......
