1 3/4 Cup Flour
2/3 Cup Sugar
2 t. Baking Powder
1/2 t. Baking Soda
1/4 t. salt
1 Cup Mashed ripe Banana (about 2 or 3)
1/3 Cup Butter
2 T. Milk
2 Eggs
1/4 Cup Nuts (Optional)

Directions:
Directions:
Combine 1 cup of the flour, sugar, baking powder, baking soda and salt. Add mashed banana, butter, and milk. Beat with an electric mixer on low speed until well blended, then on high for about 2 minutes. Add eggs and remaining flour - beat till blended - Stir in nuts.

Pour batter into greased loaf pan, bake in a 350 oven for 55 to 60 minutes or till a toothpick comes out clean - Cool thouroughly before slicing.

I like to make this - along with zucchini bread in the "mini" loaf pan that I have - it makes 4 smaller ones at a time - I usually freeze them - to have handy - when ever I might need something - -
