2 lb. stew beef cut into 1" cubes
2 14oz. cans diced tomatoes, undrained
1c. water
3 tbsp. quick tapioca
2 tsp. sugar
1 1/2 tsp. salt
1/2 tsp. pepper
1 tsp. thyme
4 carrots, cut in 1/2" chunks
4 potatoes, cut in 1" cubes
3 celery stalks, cut in 1' pieces
2 medium onions, cut in 1/2 " chunks
1 slice of bread cubed

In a large bowl combine all ingredients and mix well. Pour into 9x13" baking dish, cover with foil and bake at 325º for about 3 hours or until tender. Dish will be very full at first but food shrinks a little during cooking. This is easy as meat doesn't need browning and it makes it's own "gravy".

This is another hearty dish from Taste of Home. This became one of Gram McCarthy's favorites. I use 1/2 the meat and double the vegetables. Probably would also work in a crockpot.
