Buttermilk Chocolate Cake Recipe

3 cups flour
2 tsp baking soda
2 cups sugar
1/2 cup Hershey cocoa
1 tsp salt
2 eggs
1 cup oil
1 cup buttermilk
1 cup boiling water
1 tsp vanilla

1/2 cup butter
2 Tbsp cocoa
3 Tbsp milk
Powdered sugar
Splash of brewed coffee (secret ingredient)

Stir together dry ingredients. Add remaining ingredients and mix until well blended.

Grease and flour 9x13 cake pan. Pour cake batter in and bake at 350 for @ 45 minutes.

Frosting: In a saucepan, heat butter, cocoa, milk until mixture comes to a boil. Remove from heat and add enough powdered sugar to make desired consistency of thick, spreadable frosting. Stir in a splash of brewed coffee. Spread on cake.

This recipe from Mom has become the Albiston birthday cake -- we'd build this cake for every person, every year! The kids now make their own, if not at home for their birthdays.
