3-4 lb. chuck roast
2 T. oil
1 medium onion, cut in large chunks
1 lb carrots
6 potatoes
salt and pepper to taste
2 C. water

Directions:
Directions:
Brown roast in bottom of pressure cooker. Add onion chunks and brown. Place rack in cooker. Put in roast, top with onions. Add potatoes and carrots and water. Close cover. Place pressure regulator on vent pipe and cook 30 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord. Thicken juice with 2 T. flour and 1/4 C. water.
