First, the night before the turkey is to be served, preheat oven to 500°. Prepare thawed turkey, salting and peppering. Place in large roaster.

Pour 11/2 to 2 quarts of water over turkey. (The exact amount will depend upon the size of the roaster, because you have to allow for the juice of the turkey.) Add two sticks butter. Cover and place in the pre-heated oven. It's best if the cover will fit down over the turkey.

Cook for 1 hour at 500°, and, if using an electric stove, turn to low and DO NOT OPEN until morning. About one hour before serving, remove lid and brown at 350° for about 30 minutes. (Variation in times and degrees depends on the particular oven.) TENDER AND JUICY!!!
