3 c. flour
1 t. baking soda
3/4 t. salt
3 eggs
2 c. sugar
1 1/3 c. oil
2 T. vanilla
3 medium ripe bananas, mashed
1 c. coconut
1 c. walnuts, toasted & chopped
1/2 c. buttermilk

Directions:
Directions:
Beat eggs, sugar, and oil. Add vanilla and bananas. In small bowl combine flour, soda, and salt. Alternate adding flour combination and buttermilk. Stir in coconut and walnuts. Pour into 2 loaf pans and bake at 350º for 60-65 minutes.
