1 2-3 pound pork loin
1 cup Progresso Italian bread crumbs
1/4 cup onion
1/4 cup celery heart with leaves
2 tablespoons fresh parsley
2 cloves garlic, minced

Directions:
Directions:
Preheat oven 350º
Split pork loin in half, but not all the way through
Finely chop all the vegetables and mix with the bread crumbs
Spread over the cut side of the pork loin
Fold the loin and fasten loin together with toothpicks or sting
Rub the top of the pork with a small amount of olive oil and season with TexJoy spicy steak seasoning
Bake uncovered for 2 hours or until internal temp reaches 160º
Remove from oven and cover 15 minutes before slicing
