30 Large uncooked shrimp, peeled and deveined, butterflied (split open),
8oz extra/light virgin olive oil
1/8 cup fresh chopped basil
5 cloves garlic
salt and pepper to taste
4-6 or more large roma (plum) tomatoes (skinned then chopped)
linquine pasta

Directions:
Directions:
Saute minced garlic in oil until transluccent (clear): add shrimp. When shrimp are cooked (turn pink), add basil, tomatoes, salt and pepper. Cook a few minutes (till heated through) stirring frequently. Dish out cooked linquine to individual plates, pour desired amount of sauce and shrimp over pasta.
