1 ½ lbs. beef sirloin, cut in 1“cubes
¾ c. chicken broth
3-5 bay leaves
½ tsp. thyme
2 tbsp. oil
½ tsp. pepper
½ tsp. salt
1 onion
½ c. red wine
4 c. cut carrots, butternut squash, sweet potatoes, cubed 1”

Directions:
Directions:
Preheat oven to 425º. Toss vegetables with 1 tbsp. oil. Place on a baking sheet. Roast 20 min. or until golden. Sauté meat in 1 tbsp. oil until brown (about 5 min.) Add roasted vegetables, chicken stock, wine, salt, pepper, thyme, bay leaves. Simmer 10 min until sauce is slightly thickened. Serve over rice or with mashed potatoes.
