2 lb of either Brisket / Silverside or Topside
1/2 bottle of Red Wine
1 carrot
1 Leek
2 Teaspoon Mixed Herbs (dried or fresh)
Salt & Pepper

Directions:
Directions:
Place Beef in deep dish, add Carrot Leek and Herbs
Add to Beef and cover with Wine,
place in fridge for up to 48 Hrs turning 2 or 3 Times
Meat will absorb flavors, place in low oven
Gas 2/3 or Electric 150º cook for about 4 Hrs
or until Beef is very tender, leave to go cold
slice, use wine stock to make gravy or serve cold with Spiced Chutney.
