1 small can pineapple tidbits
2/3 cup mayo
1 tbsp Dijon mustard
1/8 tsp salt
4 cups cooked chicken (we like to pull chicken apart as soon as it is cooked)
1/4 cup celery
2 tbsp green onion diced
1/3 cup slivered almonds

Directions:
Directions:
Mix together 2 tbsp. of pineapple juice with the mayo, Dijon and salt to make dressing.

Mix together all the chunky stuff (chicken, pineapples, celery, green onions, almonds).

Add dressing

Serve on lettuce with pineapples rings and green grapes, with croissants for sandwiches (Joe does everything sandwich style), or solo.
