1 T. canola oil
1 c. chopped onions
1/2 c. chopped carrots
1/2 c. chopped celery
1/2 c. chopped red peppers
1 can chicken broth
1 1/2 c. Minute Rice, uncooked
1 c. frozen peas

Directions:
Directions:
Heat oil in a nonstick skillet. Add onions, carrots, celery and peppers; cook 5 minutes or until tender. Add broth and bring to boil. Stir in rice and peas; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes before serving.
