1 pound lean ground beef
2 slices bread, moistened
2 eggs
1/2 cup Italian Progresso bread crumbs
1 tablespoon Romano cheese
1 small onion, finely chopped
1/4 cup celery heart, finely chopped
1/4 cup fresh parsley, finely chopped

Directions:
Directions:
Preheat oven 400º
Place meat in mixing bowl with moistened bread, bread crumbs and cheese
Place eggs, and vegetables in food processor and process 5-7 seconds or until mixed
Pour over meat and knead well until mixed
Cover cookie sheets with foil and roll meat into 2 inch balls
Bake for 10 minutes
Remove from oven and drop into tomato gravy (recipe in sauces section)
Or may be frozen at this stage for later use
