1 can tuna drained
1 pkg 8oz. cream cheese (room temp.)
1/4 cup chopped onion
parsley/chopped walnuts to cover log

Directions:
Directions:
In a large mixing bowl combine tuna, cream cheese and onions and mix thoroughly. Form mixture into a loaf shape and refrigerate 20-30 minuets. Mix parsley and walnuts together, then spread out on a piece of aluminum foil, roll the tuna log in the nut mix until it is fully covered. Serve with assorted crackers.

I got this recipe from a parent at a luncheon at Nazareth H.S. when David was a freshman. I've made it every year since. Around holiday time I usually make a double amount to have 2 tuna logs. I use one tuna with oil and one with water, just make sure you drain them well. I also use 1 low fat cream cheese and one no fat to lower the calories a bit. While mixing the ingredients and when forming the log shape I use latex gloves (dollar store) while mixing and forming the log as it can be quite sticky until it is chilled. Enjoy.
