1 small zucchini
1 cup + 2 tbls flour
½ tsp cinnamon
½ tsp salt
½ tsp baking powder
¼ cup oil
½ cup brown sugar
3 egg yolks
3 tbls water

Directions:
Directions:
Preheat oven to 350 degrees.
Shred zucchini and set aside.
Combine dry ingredients in mixing bowl.
Mix oil, sugar, egg yolks, and water.
Add dry ingredients until combined.
Add zucchini.
Pour into loaf pan or cake pan and bake for about 45 minutes until toothpick comes out clean.
You can serve this way, warm or cold.
Or you can slice into ¼ inch slices. Place on cookie sheet, and bake at 350 degrees for 30 minutes, flip them over after 15 minutes.
Leave out until hard.
