3 slices bacon
1 tbls bacon drippings
1 tbls walnut oil with garlic
˝ tsp red raspberry honey mustard
2 tbls red raspberry vinegar
1 tsp honey
1 shallot, minced
1 can sliced water chestnuts
1 pkg fresh spinach
2 hard boiled eggs

Directions:
Directions:
Cook bacon until crisp. Reserve 1 tbls drippings.
Add – walnut oil, mustard, vinegar, shallots; sauté 2 – 3 minutes.
Add – spinach, salt, pepper, and crumbled bacon.
Stir quickly until spinach is evenly coated – don't over wilt. Put in salad bowl; add wedges of hard boiled eggs.
