2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
2 eggs at room temperature
2 tsp vanilla
1 cup unsalted butter at room temperature
2 cups firmly packed light brown sugar
2 cups rolled oats or quick oats

Directions:
Directions:
Preheat oven to 350 degrees.
Stir together flour, baking soda, salt and cinnamon in a small bowl. Set aside.
Stir together the eggs and vanilla in a small bowl.
In a stand mixer, beat the butter and brown sugar on medium speed until creamy and blended.
Add the egg mixture in two additions and beat until incorporated.
Scrape down the sides of the bowl after each addition.
Reduce the speed to low, slowly add the dry ingredients, and beat until just incorporated.
Stir in the oatmeal.
Drop rounded tablespoons of dough about 2 inches apart onto baking sheets.
Bake until the edges of the cookies are golden and the centers are barely cooked, about 10 minutes.
