2 tbls salad oil
1 tsp salt
1 clove garlic, crushed
1 lb lean pork
1 cup chicken consomme
1 cup canned pineapple tidbits, drained
2 cups thinly sliced celery
1 green pepper, cut into strips
2 tbls cornstarch
1/3 Cup brown sugar
2 tsp soy sauce
1/3 Cup vinegar
1 cup rice cooked
1 tsp ginger

Directions:
Directions:
Heat the salad oil in a large heavy skillet with the salt and crushed clove of garlic.
Cut the port into half inch cubes and brown quickly in the hot oil.
Add 1/3 consommé with the drained pineapple, slices celery and green pepper.
Cover and simmer gently for 15 minutes.
In a small bowl stir cornstarch and sugar together; add the soy sauce, vinegar and remaining consommé.
Add to the cooked mixture and stir until it thickens slightly.
Serve hot over hot cooked rice.
