3 pounds sweet potatoes
1 cup firmly packed brown sugar
1 tablespoon plus 1/2 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1 cup apricot nectar
1/2 cup hot water
2 tablespoons butter
1/4 teaspoon salt
1/2 cup chopped pecans
1 cup marshmallows (optional)

Directions:
Directions:
Preheat oven 350º
Boil whole sweet potatoes in salted water until tender
Remove from water and let cool
Peel and slice potatoes 1/2 inch thick and arrange in a 2 quart baking dish
Add marshmallows, if desired
Combine sugar, cornstarch,salt, nectar and cinnamon in a medium saucepan over medium heat
Stir constantly until liquid reaches a rolling boil and thickens
Add the butter and pecans and pour over the sweet potatoes
Bake for 25 minutes
