1 cup flour, sifted before measuring
1 tbls sugar
2 tsp baking powder
¼ tsp salt
1 large egg, beaten
1 cup milk
2 tbls butter, melted and cooled
½ tsp almond extract

Directions:
Directions:
Sift together flour, baking powder, sugar and salt in a large bowl and set aside.
In another bowl, combine beaten egg, milk, butter and almond extract. Stir until well combined.
Add egg mixture to flour mixture all at once, stir until just combined.
Pour 2 tablespoons of batter for each pancake onto preheated griddle. Cook until golden brown. Flip once during cooking, when surfaces are bubbly and edges are slightly dry.
Egg Nog or Buttermilk can be substituted for milk. 1 ½ cups for every cup of milk.
