Mom's Egg Nog Waffles Recipe

1 ¾ cups Flour, sift before measuring
1 Tbls baking Powder
¼ tsp Salt
2 large Eggs
2 Cups Egg Nog
½ Cup Butter
½ tsp Almond Extract

Directions:
Directions:
Sift Flour before measuring, Add Baking Powder and Salt to Flour, sift once more into a large bowl, set aside.
Melt Butter, set aside to cool.
Separate Eggs in two medium bowls, set aside.
Add Egg Nog, melted butter, and almond extract to egg yolks, beat until well combined.
Add egg yolk mixture to flour mixture, stir until combined (should remain lumpy).
Beat egg whites with an electric mixer until stiff peaks form. Gently fold egg whites into flour mixture with a rubber spatula. DO NOT overmix.
Pour ½ to 1 ¼ cups batter onto girds of waffle iron. Close lid, DO NOT open during baking.
Remove from waffle iron to Cooling Rack or plate when they are golden brown.
