Combine:
4 cups diced apples (skins on OK)
2 unbeaten eggs
1 cup vegetable oil
2 cups sugar

Sift together:
2 cups flour
2 tsp cinnamon
2 tsp soda
1 tsp salt

Quick and easy frosting for this cake:
1 pkg instant vanilla pudding mix
1 cup milk
1 cup whipping cream

Directions:
Directions:
Add sifted ingredients to apple mixture, then add 1 cup nuts.

Put in greased 9 x 13 x 2” pan. Bake 50 – 60 minutes at 350º.

To make the frosting:
Combine in bowl, and beat till stiff. Add more flavoring if desired (Mom used lemon extract or vanilla).

Refrigerate cake after frosting.
