2 medium carrots, finely chopped
½ lemon zest
½ orange peel
1 cup sugar
½ cup brown sugar firmly packed
1 tbls vanilla
1 ½ sticks unsalted butter
3 jumbo eggs
½ cup plain yogurt
2/3 cup walnuts or pecans
1 cup sifted whole wheat flour
1 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
¼ tsp freshly grated nutmeg
¼ tsp mace
¾ tsp ground ginger
½ cup grand marnier

Adjust oven rack to lower 3rd. Preheat oven to 350 degrees.
Butter bundt pan.
Combine sugars with orange and lemon zest; add butter.
Add eggs, yogurt and vanilla.
Sift flour with baking powder, baking soda and spices.
Transfer to prepared pan.
Bake until tester comes out clean and dry.
As soon as cake comes out of oven, add ¼ cup grand marnier over top of cake.
Let cool in pan 10 minutes, then turn out on rack and brush all over with remaining grand marnier.
